Savory Roasted Cherries on Baguette Slices with Goat Cheese

For an easy appetizer, serve these savory roasted cherries with slices of fresh baguette spread with goat cheese. The juicy roasted cherries pair nicely with tangy goat cheese.

Aside from pitting fresh cherries, this recipe comes together quickly. The cherries are combined with rosemary, salt, and pepper, balancing the sweetness of the fruit with savory flavors.

The roasted cherries would also be delicious as a topping for roast duck or a spicy filling for grilled portobello mushrooms.

This recipe makes about a cup and a half of roasted cherries.

Tips

  • A cherry pitter makes the pitting job much easier, but I find using a sharp knife to cut the cherries in half and remove the pit works well.
  • Use gloves to prevent your nails from being dyed red.

Ingredients

You need the following ingredients to make these savory roasted cherries.

  • 4 cups sweet cherries, halved and pitted
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon kosher salt
  • A few grinds of fresh black pepper
  • Finely chopped fresh rosemary (about 1 teaspoon)

Directions

Preheat the oven to 375 degrees.

Line a large baking sheet with parchment paper.

Combine all ingredients in a bowl and stir well.

Spread the cherries out on the baking sheet.

Bake the cherries until they are sizzling and juicy (about 30 minutes). Keep an eye on them to be sure that they don’t burn.

After cooling the cherries, use them to make an appetizer of baguette slices spread with goat cheese or as a topping on duck or your favorite grilled vegetables.
