Serve this kale salad with grilled peaches and creamy mozzarella with slices of crusty bread for a delicious dinner. The lime honey dressing and juicy grilled peaches complement the rich creamy cheese and hearty bites of kale. Sprinkle some chopped, toasted hazelnuts on top for a little crunch.
It’s a perfect main course or you can serve it as a side dish to grilled fish or chicken.
I’ve made use of the beautiful Tuscan kale from my garden and ripe New England peaches to pull together this seasonal salad. The recipe makes use of the creamy mozzarella recipe I recently posted, without the lemon.
Tip
- If you cannot grill the peaches, char them under a preheated broiler on high.
- Whether grilling or broiling the peaches, cook them only long enough to char the outside.
Ingredients
To make this kale salad with grilled peaches and creamy mozzarella, you need the following ingredients.
- 8 ounces mozzarella
- 1/4 cup sour cream
- Kosher salt to taste (about 1/4 teaspoon)
- Fresh ground pepper to taste
- 2 or 3 peaches
- 1 teaspoon olive oil
- 1 small bunch of kale, leaves trimmed and spines removed (about 6 cups)
- 2 tablespoons chopped hazelnuts
To make the lime honey vinaigrette, you need these ingredients.
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 1/2 tablespoons honey
- Kosher salt to taste
- Fresh ground pepper to taste
Directions
Make the creamy mozzarella. Shred bite-size pieces of the cheese into a bowl. Stir in the sour cream and add a little pepper and salt. Set it aside.
Make the dressing. In a small bowl, whisk the lime juice, olive oil and honey together. Add a little salt and pepper.
Peel the peaches, cut them in half vertically (top to bottom) and remove the pits. Brush them with olive oil. Lightly grill them on each side and put them on a plate to cool.
Rip the kale into small pieces, removing the tough stem and larger ribs. Rinse the pieces with cold water and rub them a bit with your hands to soften them (aka massage them). Spin them to dry.
Add the kale to a salad bowl. Toss it with a small amount of the vinaigrette.
Put the peaches on top of the kale. Distribute dollops of the creamy cheese over the salad. Sprinkle with the chopped hazelnuts. Pour more dressing over the salad and serve.
