Green Bean, Watercress and Feta Salad

This green bean, watercress and feta salad is hearty enough to serve as a meal and so delicious. You’ll love the blend of salty feta cheese and peppery watercress, topped with fresh lemon juice and earthy olive oil.

Add lots of small tomatoes and toasted pine nuts to this spring salad. Serve it with crusty bread and you have a easy weeknight dinner.

We’ve been enjoying this for dinner lately. When I cook green beans, I make extra and store them in the refrigerator to make this recipe. We’ve used arugula in place of watercress and it is equally good.

I recommend using haricot verts (thin green beans) if you can find them.

Ingredients

You need the following ingredients to make this green bean, watercress and feta salad.

  • 2 tablespoons pine nuts
  • 12 ounces haricot verts, blanched (put in boiling water and cooked until tender, but still crunchy, then rinsed with cold water to stop the cooking process)
  • 4 ounces watercress (or arugula)
  • 1 pint cherry or grape tomatoes
  • 2 1/2 ounces feta cheese
  • 2 tablespoons fresh squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • Sea salt to taste (I recommend Malden flakes)
  • Fresh ground pepper to taste

Directions

In a small skillet, toast the pine nuts on low heat (toast dry – no oil) for three to five minutes. Toss them often and watch them so that they don’t burn. Set them aside to cool while you prepare the salad.

Cut the beans in half or thirds, depending on how long they are. You want them to be bite-sized. Add the beans to a large serving bowl.

Rinse the watercress. Break off any tough ends, dry lightly (in a salad spinner or with a towel) and add to the serving bowl.

Halve the cherry tomatoes and add them to the bowl.

Crumble the feta cheese into the bowl.

When you are ready to serve the salad, add the lemon juice, olive oil, pine nuts and pepper to the salad and toss. Serve immediately.
