These green beans with lemon sumac dressing are delicious! The citrus flavors of lemon and sumac are smoothed and balanced by a touch of honey. Roasted pistachio nuts sprinkled on top provide a salty crunchy contrast.
I am a big fan of the bright taste of citrus combined with Middle Eastern spices. Vegetables combined with these flavors seem to bring hints of summer and sunlight to a winter meal. Serve your guests some bold citrus sunshine with a side dish of these green beans.
Ingredients
You need the following ingredients to make these green beans with lemon sumac dressing.
- 2 tablespoons fresh squeezed lemon juice
- Zest of half a lemon
- 2 tablespoons honey
- 1/3 cup extra virgin olive oil
- 2 teaspoons ground sumac
- Kosher salt, to taste (1/2 – 1 teaspoon)
- Freshly grated black pepper, to taste
- 1 pound fresh green beans, stem end removed
- 3 tablespoons roasted and salted pistachios, chopped into small pieces
Directions
Make the dressing. In a small bowl, add the lemon juice, lemon zest, honey, and olive oil and whisk them together. Add the sumac, salt, and pepper. Whisk until blended. Let it rest a little while, so that the salt is dissolved, taste it again, and adjust the salt if needed. Set the dressing aside.
Steam the green beans until they are tender and bright green. Don’t overcook them. They should have a little crunch.
Place the green beans on the serving plate and drizzle them with the dressing. Sprinkle the pistachio pieces over the top.
When you serve the beans, be sure to have a spoon ready to scoop up some of the dressing from the bottom of the plate and drizzle it over the individual servings.
