I am a huge fan of Dijon vinaigrette. It is one of two vinaigrettes that I almost always have on hand, so that I can pull together a salad at a moment’s notice. Its tangy, spicy flavor pairs perfectly with citrus and with spicy greens, such as arugula and watercress.
The vinaigrette takes on the flavor of the Dijon mustard, which varies a lot from brand to brand. Use a Dijon mustard brand that you love and you’ll be happy. You can experiment with other Dijon mustards to change things up.
This dressing is so good, you’ll find yourself using it for a variety of dishes. Try adding a little to cold pasta or grain salads or tossing it with sautéed vegetables before serving them.
Tips
- This dressing is delicious with a little fresh lemon juice. Substitute part of the vinegar with an equal amount of lemon juice.
- If you prefer a lighter dressing, substitute half of the olive oil with a neutral oil, such as canola oil.
Ingredients
For the Dijon vinaigrette, you need these ingredients:
- 1 teaspoon Dijon mustard
- 3 tablespoons white wine vinegar
- 1/2 cup extra virgin olive oil
- Kosher salt to taste (approximately 3/4 teaspoon)
- Fresh ground black pepper to taste
Directions
In a small bowl, whisk the Dijon mustard and vinegar together until blended. Drizzle the olive oil into the bowl, whisking to combine it. Whisk in some salt and pepper. After the dressing rests a bit, dip a lettuce leaf in it and taste it. Adjust the ingredients to suit your taste. Be sure to let the salt dissolve before tasting.
