Date Nut Granola in Jars for Gifts

Date walnut granola is as warm and rich as the date nut bread that inspired it. Sweet dates, chewy soft oats, and crunchy walnuts make an addictive blend. You’ll want to eat it by the spoonful right out of the jar.

This recipe makes about 16 cups of granola, so that you can gift it to family and friends. You can size it down if you want to make less.

Tips

  • Substitute the walnuts with pecans or other nuts.
  • If you don’t eat wheat, leave out the wheat germ. You can replace it with ground flax or another wheat substitute.
  • Use canning jars to put the granola in for gifts.

Ingredients

You’ll need the following ingredients to make this date nut granola.

  • 6 cups rolled oats
  • 1 cup wheat germ
  • About 16 dates, pitted and chopped into small pieces (approximately 1 1/2 cups)
  • 1 1/2 cups coconut
  • 2 1/2 cups chopped raw walnuts
  • 1 cup sunflower seeds
  • 1/2 cup sesame seeds
  • 1/2 cup honey
  • 1/2 cup date syrup
  • 1 cup canola oil (or another neutral oil)
  • 1/3 cup water
  • 2 teaspoons vanilla

Directions

Preheat the oven to 250 degrees.

In an extra large bowl, mix the oats and wheat germ together. Add the chopped dates in small amounts, stirring them into the mixture with your hands, breaking the sticky clumps apart to distribute them evenly throughout the oats.

Add the coconut, walnuts, sunflower seeds, and sesame seeds to the mix. Stir in the oil, water, and honey and blend well.

Spread the granola on two large baking pans with sides.

Bake the granola for 40 minutes, stirring it occasionally. The granola will not be crisp when it is done. You want it to remain soft.

Immediately put the granola back into a large bowl or pan, reserving the baking pans. While the granola is still warm, stir in the vanilla.

Spread the granola back onto the baking pans to cool. When it is completely cool, store it in glass jars.

To dress your jars up for gifts, cover the lid with a square of wrapping paper or fabric and tie it with a ribbon. You can also wrap jars in tea towels (see this post for examples).
