Serve this whipped vanilla ricotta with strawberries or another fresh fruit for a simple, delicious summer dessert.
Vanilla ricotta is a nice balance of creamy and sweet. This would also be good as a spread on baguette slices, topped with fruit or rhubarb compote.
This recipe makes 4 servings.
Tips

- You can whip this dessert with a hand-held mixer or in your food processor.
- If you are serving this with cut fruit, such as strawberries, stir the fruit with a little honey or sugar and let it sit for a while to make a syrup.
- You can substitute equal amounts of confectionary sugar for the honey.
Ingredients
You only need three ingredients to make this delicious vanilla ricotta.
- 1 cup ricotta
- 2 tablespoons honey
- 1/2 teaspoon vanilla
Directions
Add the ricotta, honey and vanilla to a large mixing bowl or your food processor bowl. Whip the ingredients until the ricotta is smooth (a minute or two). Taste it and add a little more honey if needed.
Chill the ricotta in the refrigerator for an hour or more. Serve it in small bowls.
