Watermelon Daiquiri Cocktails

Watermelon daiquiris are a perfect summer cocktail. One sip of this sweet watermelon and rum drink and you’ll be serving them all summer.

Grab a fresh watermelon and save some of it to make these delicious cocktails on the weekend.

Tips

  • I’m giving an estimate of the amount of watermelon you need to make the juice. This can vary based on the juiciness of the fruit.
  • I like this without the simple syrup, but if you want your drink slightly sweeter, start with the amount of simple syrup I list in the recipe and add a little more based on your preference.
  • Store chunks of watermelon or the juice (see below) in the refrigerator for a couple of hours before you want to make the cocktail.
  • For a lighter cocktail, use half the rum and double the watermelon juice.
  • If you have room in your freezer, chill the glasses before making the drinks.

Ingredients

You need the following ingredients to make two watermelon daiquiris.

  • 4 ounces watermelon juice (about 2 cups of watermelon chunks)
  • 2 ounces fresh lime juice
  • 4 ounces white rum
  • 1 ounce simple syrup (0ptional)
  • Thin slices of lime or lime twists for garnish

Directions

Make the watermelon juice. Purée the watermelon chunks in a food processor or blender. Line a fine mesh strainer with a clean cotton or linen dish towel and place it over a bowl. Pour the watermelon purée into the strainer. Gather the ends of the towel together and squeeze the juice through the cloth into the strainer.

Add the watermelon juice, lime juice, rum and simple syrup to a cocktail shaker. Add lots of ice and shake everything well. Strain the drinks into two large martini glasses. Garnish the drinks and serve.
