This orange and avocado salad is delicious any time of year, but it is particularly refreshing when temperatures drop. There’s nothing like the flavor of citrus in cold weather.
The creamy avocado and slightly tart orange balance each other nicely. This simple salad tastes great and has a lovely presentation.
This recipe makes two generous servings.
Tips
- If you don’t like cilantro, replace it with another herb, such as parsley.
- Add a handful of pepitas (toasted, shelled pumpkin seeds) for a little crunch.
Ingredients
You need the following ingredients for this orange and avocado salad.
- 2 tablespoons lime juice
- 2 teaspoons agave syrup
- 1/3 cup olive oil
- Kosher salt to taste (about 1/2 teaspoon)
- Fresh ground pepper to taste
- 1 tablespoon chopped cilantro
- 2 large navel oranges
- 1 large ripe, firm avocado
Directions
In a small bowl, whisk the lime juice and agave syrup together. Add the olive oil, salt and pepper and blend. Add the cilantro. Set the dressing aside until you are ready to serve the salad.
Slice the oranges horizontally from side to side (so that you have circles of orange). Make the slices about 1/4 inch thick. Using a sharp knife, cut the rind off of the slices. Layer them on a serving plate.
Just before serving, cut the avocado in half, vertically from top to bottom. Remove the pit. Cut each half into slices from top to bottom and carefully peel away the skin. You should get about six slices from each half. Arrange the avocado slices on top of the orange slices. Try fanning them into a circle as shown in the post photo.
Pour the dressing over the salad and serve.
