One bite of Gianna Coppola’s cupcakes and I knew that I wanted to try more of her scrumptious baked confections. Luckily, Gianna runs a local cake business in the Boston area.
I tried one of Gianna’s chocolate coconut cupcakes with mouthwatering cream cheese frosting. Next on my list are those apple crisp cupcakes shown in the photo, with Boston and Old Ironsides in the background.
Someone shared images of Gianna’s gorgeous unicorn cake with me and I thought, “this is the cake of a child’s birthday party dreams.”

When Gianna’s cupcakes were served at a local business’s holiday party, I was able to meet her and we made plans to do this interview.

Tell me about your business and what you do.
How did you get started?
Ever since I was little I always loved to bake. I grew up in the kitchen with my mother, who was my inspiration behind starting GGxG (Gourmet Goods by Gianna). She is a fabulous baker and cook. She is best known for her chocolate chip biscotti (they are to die for)!
It was in a chemistry class my sophomore year of college that I knew what I wanted to do. I knew I was meant to be baking.
I decided to enroll in the Cambridge School of Culinary Arts’ Professional Pastry Program. It was the best decision I’ve made. I had an intensive 37-week training of everything pastry, with a 5-week training on savory foods. CSCA primarily focused on the French style of baking, but did go into cooking from other countries and U.S. cities.
After I graduated, I did not have a set plan. I was looking to enjoy my summer and see where the wind took me. Then I got a call from a family friend who owns a bakery called Quebrada (Belmont, Arlington, and Wellesley locations). He asked if I was looking for a job in a bakery and I jumped at the offer. I was so excited. I got the opportunity to start in the cake room and I haven’t looked back. It has been such an enjoyable 1.5 years there so far and I look forward to many more years working there.

What was the first event you ever baked for?
My eyebrow lady! I was getting my brows done for before my graduation from CSCA I believe, and she asked if I was taking any orders for cupcakes since she needed some for her niece’s graduation party. I made her 3 or 4 dozen cupcakes (vanilla, chocolate, and carrot). I didn’t even have packaging yet! I used plastic containers from the Dollar Tree to transport them!
What is your favorite cake?
My favorite cupcake personally is the carrot, I just love it – I’ve always been a fan of carrot cake and when topped with cinnamon cream cheese frosting, it is fabulous.
My favorite cake is the unicorn cake – it was the first cake I did where I was like “wow, I am actually pretty talented at this!” I got an order for one for a family friend’s daughter, and I was just so proud of the outcome that it is still my favorite. I also love all of the different colors and sprinkles on the bottom – there are endless possibilities for it, so it makes it fun to do.

My new idea is a line of cereal-themed cupcakes. I feel like the nostalgia will be high here for many customers and just a fun way to combine two delicious treats – cupcakes and cereal!

Regular sized cupcakes are $27.50 for a dozen and you can have up to four flavor choices in a dozen. Mini cupcakes are $15 a dozen and you can include up to two flavor choices in the dozen. Cake costs vary based on the cake size and what kind of cake you want.
