Blistered Shishito Peppers

These blistered shishito peppers are so flavorful, you would not believe that they are almost effortless to pull off. They make a great appetizer or a tasty side dish to grilled fish, meat or vegetables.

Shishito peppers are a beautiful light green pepper with a crisp wrinkled skin. They grill beautifully and are also easy to blister in the oven.

Shishitos are a citrusy, lightly smoky pepper that are usually very mild. Every once in a while, you’ll get a hot one and, as far as I can tell, there’s no way to identify the hot ones by their appearance. Consider those a dining surprise.

I first bought a pint of these peppers at the West Tisbury Farmers Market. We brought them home, tossed them in olive oil and salt, grilled them and immediately became addicted. They are extremely good!

I’ve eaten these as appetizers. I’ve added them to rice and veggie bowls and I’ve served them alongside grilled salmon with cilantro pesto.

Tips

  • You can find these peppers at your local farmers market, Whole Foods or Trader Joe’s.
  • If you are serving these as appetizers, be sure to provide napkins and a side dish to hold the discarded stems.

Ingredients

You only need three ingredients to pull off these peppers:

  • 12 ounces shishito peppers
  • 3 tablespoons of olive oil
  • 1 teaspoon kosher salt (or a little more to taste)

Directions

You can grill these peppers in a grill basket on a hot grill or roast them in a hot oven.

Grilled Peppers

If you are grilling the peppers, get your hardwood charcoal hot (or heat your gas grill in advance).

Toss the peppers in the olive oil and salt. Put them in a grill basket on the grill. Grill them until lightly blistered and charred (about 15 minutes). Remove them from the heat and dish them up according to your preference.

Oven Roasted Peppers

If you are using an oven, preheat it to 425 degrees.

Toss the peppers in the olive oil and salt. Spread them out on a large baking sheet.

Roast the peppers in the oven for about 20 minutes, until they begin to blister and char a little. Toss them with a spatula about half way through. Remove them from the oven and serve as planned.
