For a refreshing, sparkling drink, give this Russian Rhubarb Spritz a try. Add it to your spritz cocktail repertoire for drinks to enjoy during the longer, warmer evenings of spring and summer!
Be sure to make a batch of rhubarb simple syrup to store in the refrigerator, so that you can indulge in this spritz whenever the moment strikes. Use your favorite vodka and the sparkling wine of your choice to make this bubbly refreshment.
This recipe makes two drinks.
Tips
- Make a lighter drink by replacing the sparkling wine with seltzer water (I’ve used San Pellegrino).
- If you have a stem of rhubarb, it would make the perfect garnish.
- Serve this on the rocks or chill all of your ingredients and skip the ice.
- If you like sweeter cocktails, add a little more simple syrup.
Ingredients
- 4 ounces vodka
- 1 1/2 ounces rhubarb simple syrup
- 1 ounce fresh lime juice
- Approximately 4 ounces sparkling wine
- Lime slices for garnish
Directions
In a cocktail pitcher, mix the vodka, rhubarb simple syrup and lime juice together. Pour into wine glasses. Top with sparkling wine and gently stir. Add the lime garnish.
