Pasta with Green Beans and Prosciutto

If you are in need of a comfort dish, give this pasta with green beans and prosciutto a try. The prosciutto takes the flavor up a notch with its salty smokiness. This pasta is so easy to make, you’ll want to put it on a regular menu rotation.

Keep a sealed package of prosciutto on hand in the frig and you can pull off this meal anytime. This will solve your after work dinner needs or feed a group of friends on the weekend. Add a light salad and you’re good to go.

Tips

  • If you don’t eat meat, this dish will still taste good. You may want to add a little basil (oregano or thyme), but the garlic gives the dish a lot of flavor.
  • This dish is traditionally cooked with peas. I substituted green beans. You can use peas, sugar snap or snow peas (sliced into thin strips), or another vegetable that you love.
  • If you are in a hurry, use frozen chopped green beans or peas. Add them to a colander and run some warm water over them to thaw them most of the way. Shake them well before adding them to the skillet.
  • I add a lot of green beans to the recipe. If you prefer less, decrease the amount.
  • Don’t use grated Parmesan cheese. Use bigger shredded pieces of cheese.
  • I recommend fettucini or spaghetti for this dish.

Ingredients

You’ll need the following ingredients for this dish:

  • 1 package (16 ounces) linguine
  • 4 cups of green beans, blanched and chopped into small pieces (about 1 inch long)
  • 1/4 cup olive oil
  • 3 large cloves garlic, crushed and chopped
  • 1/2 pound prosciutto, thinly sliced and cut into thin strips
  • 1/4 cup shredded Parmesan cheese
  • Freshly grated pepper to taste
  • Kosher salt to taste

Directions

Bring a large pot of water to a boil. Add salt and cook the pasta until it is al dente.

While the pasta is cooking, add the oil and garlic to a large skillet. Over medium heat, sauté the garlic for a minute, being careful to not let it burn.

Add the prosciutto to the skillet and sauté for a couple more minutes. You want to slightly cook the meat, releasing its flavor and melting some of its fat into the oil and garlic.

Add the green beans to the skillet and sauté them until they are warm.

When the pasta is ready, drain it and add it to the skillet. Add fresh pepper and toss the pasta. Turn off the heat. Add the Parmesan cheese, toss it. Taste and add pepper or salt as needed.
