This simple mango, tomato and basil salad is a flavorful option for a summer meal. The combination of acidic tomatoes and sweet mango is wonderful!
Take a trip to your local Farmers Market to pick up fresh cherry tomatoes and basil to make this delicious salad. If you can find the sweet, yellow-skinned Ataulfo mango (also called Honey mango), I recommend using it for the salad.
Ingredients
You’ll need the following ingredients to make this mango, tomato and basil salad.
- 1 mango
- 12 cherry tomatoes
- A handful of basil leaves
- 2 tablespoons extra virgin olive oil
- 1 lime, cut in half
- Sea salt, to taste
- Fresh grated pepper, to taste
Directions
Slice each side off of the mango, close to the pit. Then slice each side vertically in 1/4 – 1/2 inch slices. Peel the skin off each slice by sliding a sharp knife between the skin and the flesh. Arrange the mango slices on the serving dish and squeeze a little lime juice over the fruit to keep it from darkening.
Slice each cherry tomato in half and add the tomatoes to the serving dish.
Cut the basil into thin strips and sprinkle them over the salad.
Before serving, squeeze a little more lime juice over the salad, drizzle the olive oil over it, then sprinkle a little salt and pepper on top.
