We’re headed to New Hampshire to visit family this weekend. The weather is supposed to be warm and sunny, making the weekend a great opportunity for sight-seeing.

Speaking of warm and cozy, we’ve been eating scrambled eggs for dinner so often. Tom adds a little Dijon mustard and a few slices of whatever cheese we have on hand, then scrambles the eggs in lightly browned sizzling butter. Toasted and buttered white bread accompanies the eggs. There are no frittatas, no whole grain bread, not even a fresh salad. The focus is solely on the eggs and toast and they are delicious!
There’s something about this dish that is so comforting. I think that there might be two reasons for our craving: it’s getting dark earlier, which is a little depressing, and the world is a very stressful place right now. But, maybe we just love scrambled eggs and toast.
