Sweet petite peas make a scrumptious green pea spread with lemon, garlic, and mint. Its fresh flavor is addictive! An added bonus is that it is so easy to make.
This spread has a hint of sweetness from the baby peas and it pairs perfectly with the mint, garlic, and lemon flavors. It’s delicious topped with a little fresh ricotta. Try making pea toasts for a change from avocado toasts.
This recipe makes a little less than two cups.
Ingredients
You need the following ingredients to make this green pea spread.
- 2 cups petite peas (fresh peas blanched or frozen peas thawed)
- Handful fresh mint leaves (about 20)
- 1 large clove garlic, cut into pieces
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- Kosher salt to taste (about 1/2 teaspoon)
- Freshly ground pepper
Directions
Add the peas, mint, garlic, lemon zest, lemon juice, and olive oil to the bowl of a food processor (or a blender). Process until fairly smooth. Add a little salt and pepper to the mix and process everything together. Taste and adjust salt and pepper.
Serve this spread on baguette slices or provide fresh vegetables to use for dipping.
