Fruit salsa makes a nice alternative (or companion) to tomato-based salsas. This pineapple salsa is one of my favorites. It’s great with tortilla chips, delicious with grilled chicken or fish and wonderful on fajitas.
Tips
- Use ripe, fresh pineapple for this recipe.
- When you chop the jalepeño pepper, wear rubber gloves.
- If you don’t have a jalapeño pepper, use a pinch of dried red chili pepper (that’s why you see bits of red in my photo).
Ingredients
You need the following ingredients for this pineapple salsa:
- Half a ripe pineapple (with outside and core cut away)
- 1 small jalapeño pepper (about a teaspoon chopped or more if you like things more spicy)
- Juice of 1 lime (at least a tablespoon)
- Cilantro, chopped (about 1 tablespoon)
- Pinch of kosher salt
Directions
Chop the pineapple into small pieces and add to a bowl.
Cut the jalepeño pepper in half, remove the seeds and stem and chop half of the pepper finely. Add the chopped pepper to the pineapple. Add the lime juice, chopped cilantro and salt. Stir. Let the salsa sit for a few minutes and stir it again before serving.
