Caprese salad doesn’t have to include tomatoes. Try substituting figs. This fig caprese salad is scrumptious!
If you’re like me, the word “caprese” makes your mouth water. Your caprese doesn’t have to be in the traditional form of tomatoes, buffalo mozzarella and basil, although that has to be one of my favorite summer dishes. While fresh figs are available, I highly recommend that you give this fig caprese salad a try. It is so flavorful!
Ingredients
-
8 ounces buffalo mozzarella or fresh mozzarella
-
8 ounces ripe fresh figs, cut into quarters
-
Several basil leaves
-
Fresh black pepper
-
Sea salt
-
4 tablespoons good quality olive oil (more if you like)
Directions
Tear the mozzarella into pieces and scatter it over the serving plate.
Distribute the fig quarters around the plate.
Tear the basil leaves and add them to the cheese and figs. Grate the pepper (coarse grind) over the ingredients and sprinkle with salt.
Drizzle everything generously with olive oil.
Serve with slices of good bread.
