Colcannon (Cabbage and Mashed Potatoes)

Colcannon is a traditional Irish dish made from cabbage and potatoes. The combination of sweet sautéed cabbage, butter, and mashed potatoes is a satisfying comfort food.

Colcannon is not traditionally made with cheese, but many people add Irish cheddar cheese to the dish. It’s a delicious addition. Other additions that are often suggested are chopped green onions or pieces of bacon.

Serve the cabbage and potato dish with corned beef or sausages.

This recipe makes 8 – 10 servings.

Tips

  • Any potato will work in this recipe. Most people recommend Russet or Yukon Gold.
  • You can make this with leftover whole boiled potatoes (remove the skin).

Ingredients

You need the following ingredients to make colcannon.

  • 3 pounds potatoes, peeled and cut into chunks
  • 6 tablespoons butter
  • 6 cups chopped cabbage (approximately 1 1/2 inch pieces)
  • 1/2 cup warm whole milk
  • 2 cups shredded Irish cheddar cheese (optional)
  • Kosher salt, to taste
  • Fresh ground pepper, to taste

Directions

Fill a large pot of water with cold water and add the potato pieces. The water should cover the potatoes. Bring the water to a boil and cook the potatoes until they are tender when you stick a fork into them (about 20 minutes). Drain them, add them back into the pot and lightly mash them with a potato masher.

While the potatoes are cooking, add the butter to a large skillet and melt it over medium high heat. When the butter is sizzling, add the cabbage. Sauté the cabbage until it is tender (10 – 15 minutes). Turn the heat under the skillet to low.

Add the mashed potatoes to the skillet. Add the milk. Fold everything together.

Add the cheese, if you are using it, and stir it into the potatoes and cabbage. Add a little salt and pepper. Taste and adjust the seasoning. When the cheese is melted, which should be quick, serve the colcannon.
