You can pull this confection together in minutes and everyone will love it. It’s delicious with fresh fruit sprinkled on top, but you can also serve it with a raspberry sauce. Purée raspberries and a little sugar to make the sauce.
Chocolate mascarpone doesn’t just have to be for dessert. Try spreading the mascarpone on scones or toast. Add a dollop to waffles or pancakes.
The recipe makes about 1 1/2 cups.
Tips
- You can use a hand held mixer or a stand mixer to blend the ingredients.
- Use extra dark cocoa powder for a rich chocolate flavor. Some of the companies that make dark cocoa powder are King Arthur, Hershey, and Ghirardelli.
Ingredients
You need the following ingredients to make chocolate mascarpone.
- 1 cup mascarpone
- 1/4 cup heavy cream
- 2 teaspoons extra dark cocoa powder
- 3 tablespoons confectionary sugar
Directions
Add everything to a deep bowl. Lightly stir together, so that the powders don’t fly out of the bowl when you mix them.
Using a mixer, blend the ingredients together until smooth.
Let the mixture sit for a while before serving, so that the flavors merge. Store in the refrigerator until using it.
