Make a batch of BBQ turkey nachos and serve an unexpected dish to your family or friends made from Thanksgiving turkey leftovers. They’ll love them!
A few years ago, I made these nachos with leftover Thanksgiving turkey, and we devoured them! I just purchased a bottle of barbecue sauce so that I can make them again.
This is one of those recipes that you can play with. Change things up to include your favorite nacho toppings.
This recipes makes about 6 servings.
Tips
- Thick tortilla chips work better for nachos than thin chips.
- You can substitute 1 cup fresh chopped tomatoes for the 1/2 cup of salsa.
- Here are some other toppings that would be delicious: sliced olives, diced red onion, chopped roasted red pepper, cilantro, or black beans.
- Serve with guacamole, in addition to the salsa and sour cream included in the recipe.
Ingredients
You need the following toppings to make these BBQ turkey nachos.
- 3 cups shredded cooked turkey
- 1 1/2 cups barbecue sauce (I used Rufus Teague BBQ Sauce, Touch O’Heat)
- 1 12-ounce package tortilla chips
- 3 cups shredded cheddar cheese or pepper jack cheese
- 1 large jalapeño pepper, sliced
- 1/2 cup chunky salsa, plus extra for serving
- 1/3 cup chopped scallions
- Sour cream, to taste
Directions
Preheat the oven to 350 degrees.
Add the shredded turkey to a bowl and stir in the barbecue sauce.
Spread the tortilla chips over a large baking sheet. Sprinkle about half of the cheese over the chips and evenly distribute spoonfuls of the turkey on top. Add the rest of the cheese, the pepper slices, and spoonfuls of salsa.
Bake the nachos until the cheese melts (10 – 15 minutes).
Sprinkle the scallions over the nachos. Serve with extra salsa and sour cream.
