Balsamic Vinaigrette

Balsamic vinaigrette is one of the salad dressings that I always have on hand. It is terrific on many types of green salads and it is delicious blended with grain and vegetable salads. Its robust flavor complements many vegetables and fruits, making it a versatile dressing with many uses.

I adopted a vinaigrette recipe used by some of my French friends. I use a small amount of olive oil and a larger amount of canola oil to make a lighter dressing. Use only olive oil if you prefer.

This recipe makes about 1 cup of vinaigrette.

Ingredients

You need these ingredients for the balsamic vinaigrette:

  • 1/4 cup extra virgin olive oil
  • 1/2 cup canola oil
  • 1/4 cup balsamic vinegar
  • kosher salt to taste
  • fresh ground black pepper to taste

Directions

In a medium bowl, whisk the vinaigrette and oils together. Add some salt and pepper. Let the dressing rest a little and then dip a lettuce leaf into the dressing and taste it. Adjust the ingredients to suit your taste. Be sure to let the salt dissolve before tasting.
