This roasted asparagus with feta, dill and lemon is addictive! We had a big batch for dinner and I wanted to run out and buy another bunch of asparagus to make it again. Roast or grill the asparagus for this recipe to intensify the flavor.
Even if it is still cold outside, the asparagus, fresh dill and tangy lemon will remind you that it is spring.
This recipe makes two generous servings.
Ingredients
You need the following ingredients to make this asparagus with feta, dill and lemon.
- Large bunch asparagus
- 2 tablespoons olive oil
- Kosher salt, to taste
- Fresh ground pepper, to taste
- 1 lemon
- 5 ounces feta cheese
- Handful fresh dill, torn into pieces
Directions
Preheat the oven to 400 degrees.
Break the tough ends off of the asparagus. Spread the asparagus in a single layer in a large baking pan. Drizzle them with olive oil and roll them around in the oil a bit, so that the pieces are mostly covered with oil. Sprinkle the asparagus with a little salt and pepper. Roast them in the oven until they are tender when pierced with a folk (about 15 – 20 minutes).
Arrange the asparagus on plates. Grate the rind of the lemon over them. Cut the lemon and squeeze a little juice over the asparagus. Crumble the feta on top and distribute the dill over everything.
