Almond overnight oats, served with fresh peaches, make a healthy and delicious summer breakfast. Overnight oats are easy to make and are a satisfying way to start your day. This version is particularly good with fresh summer peaches and toasted slivered almonds.
It takes minutes to whip up a batch of overnight oats the night before you want to eat them.
You can make overnight oats with yogurt, milk or any of the non-dairy milk options. The possibilities for add-ins are endless. You can stir in fruit, jam, peanut butter or chia seeds. If you want to include nuts, I recommend adding them just before you eat the oats. They’ll get soggy if you put them in the oats overnight.
This recipe makes two servings. Double or triple this recipe and you’ll have oats for several mornings.
Ingredients
You need the following ingredients to make almond overnight oats.
- 1 cup whole rolled oats
- 1 cup unsweetened almond milk
- 1 teaspoon honey or agave syrup
- 1/4 teaspoon almond extract
- A pinch of kosher salt
Directions
Add the oats to a mixing bowl.
Add the honey and almond extract to the almond milk and stir it until the honey is blended with the almond milk.
Stir the almond milk into the oats. Stir in the salt.
Chill the oats in the refrigerator overnight.
Serve the oats with fresh fruit. While any fruit will be delicious, almond oats go particularly well with fresh peaches, nectarines, plums or apricots. Sprinkle toasted slivered or sliced almonds over the top.
