To make these cocktails, you’ll need some rhubarb simple syrup and sparkling wine.
Tips
- Make the rhubarb simple syrup in advance and store it in the refrigerator. Freeze some, so that you have it on hand long after rhubarb season is over.
- Make nonalcoholic versions of this drink using seltzer water.
Ingredients
- Sparkling wine, Champagne or Prosecco
- Rhubarb simple syrup (recipe at this link)
- Lime twist for garnish
Directions
Pour the sparkling wine into champagne glasses, leaving room for the syrup. Add a small amount of rhubarb simple syrup (a tablespoon or less) to each champagne glass. Garnish the drink with a twist of lime.
Voilà! The drinks are ready to serve.
