Cherry Basil Cocktails or Mocktails

Try cherry basil cocktails for a refreshing summer drink. The licorice taste of basil provides a nice  contrast to the sweet cherries and blends well with gin. If you don’t want alcohol, you can easily turn this into a mocktail.

This recipe makes two cocktails.

Tips

  • If you don’t have a cocktail shaker, stir the drink with ice and then strain as instructed.
  • If you want a cherry basil mocktail, use 6 – 8 ounces of seltzer or soda water in place of the gin.

Ingredients

You need the following ingredients to make cherry basil cocktails.

  • 12 Bing cherries, pitted
  • 2 1/2 ounces fresh squeezed lime juice
  • 2 ounces simple syrup
  • 4 ounces gin
  • 2 ounces soda water
  • Basil leaves for garnish

Directions

In a large pitcher, muddle the cherries. Add the lime juice, simple syrup, and gin and muddle the cherries a little more to infuse the liquids with the cherry flavor.

Place a strainer over another pitcher and strain the cherries from the liquid, pressing the solids with the back of a spoon to release all of the liquid.

Add ice and the liquid to a cocktail shaker and shake well.

Fill two rocks glasses with ice. Strain the cocktails into the glasses. Pour the soda water on top.

Garnish the cocktails with the basil leaves and serve.
