This lemon arugula pasta is just the dish to brighten a cold winter evening. The fresh tangy burst of lemon is a welcome change from heavier winter foods. Pine nuts add their sweet buttery flavor to this delicious dish.
Luckily, citrus is readily available in the winter when we really crave it. Take advantage of its availability and make this lemon arugula pasta for dinner soon.
I got this recipe, a variation of pasta al limone, from Killing Thyme. I made a couple of minor changes, using more arugula and adding pine nuts.
Ingredients
You’ll need the following ingredients for this lemon arugula pasta recipe.
- 1 pound spaghetti
- Zest of two large lemons
- Lemon juice from two large lemons
- 5 tablespoons extra virgin olive oil
- Kosher salt, to taste
- Freshly grated black pepper to taste
- 1 cup finely grated parmesan cheese, plus more for garnish
- 4 ounces arugula (about half a bag)
- 1/3 cup of pine nuts
Directions
Toast the pine nuts dry in a small skillet over medium-low heat, stirring frequently until very lightly browned, about 3 minutes. Be careful because they burn easily. Set the nuts aside to cool.
Bring a pot of water to boil. Add a little salt to the water and then add the pasta. Cook the pasta until it is al dente.
While the pasta is cooking, add the lemon zest and juice to a medium bowl. Add the olive oil in small amounts, whisking it with the lemon juice until the mixture is emulsified.
Put the grated parmesan into the bottom of a large serving bowl. Grate fresh pepper into the bowl.
When the pasta is done, pour the lemon and olive oil into the serving bowl. Add the pasta and then the arugula. Using tongs, gently toss the pasta and arugula with the sauce and cheese. Add a little salt and the pine nuts and toss everything again.
Serve immediately.
